Mincemeat Bran Muffins

Do you enjoy mince pies? They are such a winter staple with the spiced fruits but they can be an acquired taste.

This mincemeat muffins recipe is a wonderful bran muffin, that is soft and moist with a mild mince pie flavour.

Ingredients

  • Egg, medium sized free range are the best.
  • Olive oil. You can use another alternative if you prefer, like avocado, groundnut, or grapeseed oil for example.
  • Golden Caster sugar. I love the sugar its like the best of both worlds, white and light brown sugar in one.
  • Milk. I used a semi skimmed (2%) when I made mine, but you can use any milk that you prefer, including oat or almond milk.
  • All purpose flour. You can use self raising flour too just make sure to omit the baking powder.
  • Bran. The bran for this recipe is a wheat bran. Depending on where you live this might be found in your local supermarket in the cereals section by the porridge or in a health food store. If you still struggle to find it then I would suggest ordering it online like from amazon. I nearly make the mistake of buying a bran muffin mix instead of just plain wheat bran so watch out for that.
  • Baking powder. Omit this if you choose to use self raising flour.
  • Baking soda.
  • Salt.

How to make the mincemeat muffins

These muffins are so easy to make. You don’t need any fancy gadgets for this recipe.

Begin by turning your oven on to 375F, 190C, gas mark 5

Line your muffin pan with the muffin cases you should need around 12 cases.

In a medium or large mixing bowl add the egg, oil, and sugar. Mix together well so that the sugar has dissolved, it should look a bit like soft caramel.

Next add in the milk and the mincemeat. Mix into the egg sugar mixture it should be pretty runny, like a pale brown milk.

Finally add in the rest of the dry ingredients, that will be the flour, bran, baking powder, baking soda and salt.

Fold these ingredients in well so that there is no dry clumps left in the batter.

Using a large cookie fill the muffin cases as full as you can leaving a tiny gap the top.

Place into the preheated oven and bake for 20 minutes.

Remove the muffins from the oven and carefully place them onto a cooling rack to cool before enjoying.

These mincemeat muffins will store well in an airtight container for up to a week.
